Today was Thanksgiving, and among several other things, I made this very simple side dish of oven roasted vegetables, after baking them for about an hour covered at 400 degrees, I coated them in a glaze I made out of maple syrup, with a dash of teriyaki sauce, and orange juice, and baked uncovered for another 15 min, they were so good. I will be making my roasted veggies like this often, not just for holidays.
Ingredients:
(Really just choose your own favorite large veggies, but this is what I used)
7 small red potatoes cut in half
5 large carrots, peeled
1 large sweet potato peeled and cut in quarters
6 half corn on the cob, fresh or frozen
1 large white onion cut in quarters and separated
2 cloves of garlic, minced
1/2 t of dried rosemary crushed
S&P to taste
Glaze: Apply after veggies are baked tender.
Mix together, then brush over all vegetables, then bake uncovered until lightly browned on edges
3 T of Teriyaki Sauce
1/4 cup 100% maple syrup
3 T of fresh squeezed orange juice
Bake vegetables covered in 400 degree oven for one hour. Use brush to brush just a little of the glaze on top before putting in oven and add about a 1/2 cup of water or veg broth to bottom of pan. Add water as needed to keep veggies from burning. After approx one hour or until the potatoes are fork tender, remove foil and pour the glaze, or brush over the top, bake at 425 degrees until lightly browned. Some optional additions to your glaze could be a touch of pineapple juice, or even a pinch of cinnamon.
