
Fancy Potato Cakes!
Fancy maybe, but not difficult at all.
1 bag of frozen hash browns, thawed and drained (squeeze all water out with paper towels) add
1/2 large grated onion,
1 grated green pepper,
1 grated sweet potato
1/2 of a grated zucchini,
1/2 T garlic,
s&p as desired,
Precook zucchini, onion,and sweet potatoes 5 min in microwave), then combine with thawed potatoes, and 1 cup Panko bread crumbs, 2T soaked flax (this is your egg substitute ,use 2T ground flax seeds soaked in 5-6 T warm water for 10 min), form patties, the thinner they are the crispier they will be, and bake on silicone sheet or parchment paper at 400 35-40 min, flipping once or until brown and crunchy. Oh, so good and filling. I love to dip in just plain ketchup, but use your imagination. Serve with your favorite greens. Mmmm... Mmmmm. :)
