Do you ever have one of those nights where you want something different than the usual? This is how I came up with this one. Experimenting in the kitchen is so much fun. I love eggplant, tofu, peppers, onions, and mushrooms, and I had them all on hand. This was very flavorful and you can change it up many ways.
Ingredients:
1 whole eggplant peeled and sliced
6 oz of super firm tofu sliced
4 sweet peppers sliced
1 onion sliced
1 large tomato sliced
2 jalapeno pepper sliced
2 cups of chopped kale
5 mushrooms sliced
1 T of minced garlic
5 T of teriyaki sauce
Slice up all ingredients to about the same size. Layer all ingredients in a seasoned iron skillet with the tofu around the edges so it browns nicely. Sprinkle half of the teriyaki sauce over the top. Bake in preheated 375 degree oven for approx 40-45 min. Keep checking so it does not burn. It is done when well browned and vegetables are tender. Sprinkle the remainder of the teriyaki sauce before serving, and salt and pepper to taste. If you don't like a lot of heat, remove the jalapeno's before serving, you will still get the flavor without burning your lips. (Like I did :) This makes 3 large servings. Eat on it's own or roll up in a tortilla, either way, it is delicious.
