Okay, I know it looks weird, even a bit alien, and possibly not all that appetizing. But give it a go, it will surprise you! I had seen recipes for this foreign looking dish, but was honestly a tad nervous to try it. What I found was a delicious and surprisingly filling dish, that you prep the night before and it magically gels up overnight. It is my new obsession, I could have it every morning for breakfast! I added Cacao Nibs and a few frozen strawberries to mine and really enjoyed it.
Ingredients:
1 cup of unsweetened Non Dairy Milk (coconut milk is amazing, rich and delicious, but use what you like)
2 T of Chia Seeds
1/2 tsp of Pure Vanilla Extract
1 small packet of sugar substitute. (I like Stevia, but use your favorite or just regular sugar)
2 T of Cocao Nibs
3-4 fresh or frozen strawberries
You will need to prepare this the night before for best results. Stir together the milk, chia seeds, 1/2 of the cocao nibs, vanilla and sugar. Put in refrigerator for 2 hours, then stir because the seeds tend to sink to the bottom until it starts to set up. Stir again a few hours later, then cover and leave it alone. The next morning simply remove from refrigerator and top with the remaining cocao bits and pop a few strawberries in it, or use the toppings of your choice. It is also very good with a variety of nuts, seeds, and granola thrown in. Enjoy!
