This savory soup is so filling and full of flavor. You can feel confident serving this up to guests with some crusty bread, a side salad, and it is a complete meal. I was full from just one bowl of this deliciousness! It is so easy to whip up, perfect for weeknights after a hard days work. About 30-40 min counting prep time. Soups are one of my very favorite things to make, a complete meal, and only one pot to clean.
Ingredients:
2 large sweet potatoes, peeled and diced (or 3 med size)
1/2 sweet yellow onion, peeled and diced
2 cloves of fresh garlic, minced
2 ribs of celery, diced
1 small zucchini peeled and diced (optional but good)
1 large carrot diced small
2 veg bullion cubes
4 cups water
2 cans of Black Beans, drained and rinsed well (15 oz cans)
1 cup of potato gnocchi or your favorite pasta
1/4 tsp of Liquid Smoke
S&P to taste

1 heaping T of corn starch whisked and dissolved in 1/4 cup of cold water
Bring water, spices, liquid smoke, and veg cubes to boil, add the carrot, onions, garlic, celery, and simmer for 5 min, then add the sweet potatoes, and zucchini, bring back to boil then simmer for about 15 min covered or until potatoes are almost done, then add the beans, and noodles or gnocchi. Simmer for about 10 more minutes, last two minutes stir in the corn starch/water mixture and stir to make a creamy soup.... remove from burner and let sit covered for 5 min. If it gets too thick on you simply add a bit more water. Stir and serve. Enjoy.
Optional Suggestion: Stir in some chopped kale, chopped spinach, or any other favorite greens the last 5 minutes. This makes 4 servings, approx 345 calories ea.
