
This makes an amazing dish that can be the main dish, or a side dish. (I eat it as my main, but my husband eats it as his side dish) The first thing I do is make my White Sauce and set it aside. Click above for recipe of my White Sauce or make your own favorite version.
Ingredients:
1 large Yukon Potato, Peeled and sliced with mandolin thinly.
1 head of Broccoli, sliced in pieces
1/2 of a red pepper, chopped
1/4 of white onion, chopped
2 cups of your favorite White Sauce
Salt and Pepper to taste
Preheat oven to 375 degrees. I used a 9x9 non stick pan for mine, if you want to double the recipe use a larger pan. Put in layers in your pan the following:
White Sauce
Potatoes
Onions and Red Peppers
Broccoli
Keep doing until you run out, my top layers is just the potatoes and white sauce. You could also sprinkle some cheese on top if you choose to make more of an Au Gratin style.
Once arranged, cover with foil and bake at 375 degrees for 45 minutes covered, then another 20 minutes uncovered. at 400 degrees. (I like it to get just a little crunchy on top.)
This makes 4 large servings less than 200 calories each.
