Brown Rice Curry with Vegetables
I made this in my pressure cooker but you could easily make it on the stove top, just start the brown rice first, it takes about 30 minutes total, so add the veggies after 20 minutes.
This is an EASY one.... 1 cup brown rice, 2 cups water with 1 T of green curry paste (I like Thai Kitchen Green Curry) dissolved in the water, loads of veggies (about 4 cups uncooked), s&p to taste, 1/2 tsp curry powder, 1/2 C Coconut Milk, 15 min. in pressure cooker, or 30 minutes on stovetop, 20 min for rice, then add veggies.
I used carrots, spinach, onions, tomatoes, zucchini, corn, peas, and mushrooms. But in a pinch to save more time, a bag of frozen mixed veggies would work just as well.Use your imagination and Enjoy!
