Stir Fry. The dish that always satisfies. The addition of the pineapple to this stir fry really takes it to the next level. I think it is best served with your favorite rice. Shown is Jasmine White Rice, my favorite, but use what you like.
Ingredients:
1 pound of cleaned peeled deveined shrimp
1 large diced up red pepper
1 small white onion chopped
3 cups Broccoli florets
1 cup Cauliflower florets
1 cup sliced carrots
1 can pineapple chunks, drained
Pinch dried chili pepper flakes
3 T Soy Sauce
1/2tsp garlic powder
1/2tsp Brown Sugar
2 cups prepared Rice
S&P to taste
4 T Sweet and Sour Sauce
Prepare your rice and set aside with lid to stay warm
In large skillet or wok, heat your shrimp on med high to high until lightly browned. Add the
carrots first for a few minutes, then onion, red pepper, Broccoli and Cauliflower. Heat on higher heat until heated through, add the spices and pineapple, then cover skillet and heat on med heat until vegetables reach their desired tenderness. Mine took about 10 minutes. Plate up and drizzle the Sweet and Sour sauce over the top. Enjoy!
This makes 2 very large servings approx 535 calories ea.
