Don't think for a minute you have to give up your tacos just because you are eating plant based. Mexican food is actually one of the best choices when dining out. I ordered something like these at a local Mexican restaurant and I enjoyed them so much I decided to try and duplicate them at home. They turned out so well, I now have them on a regular basis.
Ingredients:
4 White Corn Tortillas
1 cup black beans (drained and rinsed)
1/2 cup diced onion
1/2 of an avocado diced
1 cup shredded lettuce
1/4 cup salsa
1/2 tsp of taco seasoning
1/4 cup taco sauce (optional)
In large non stick skillet, heat your tortillas on med high heat until browned. Set aside and fold them over while they are still warm. Stir your taco seasoning (or use your own mix of cumin and chili powder) into your black beans, then warm in the microwave for 1 minute or of course you can heat them in a pan on the stovetop. Fill up your tacos with the beans, avocados, onion, lettuce, and a nice dollop of salsa. If you like you could also add some vegan shredded cheese and vegan sour cream. But honestly they were delicious without it. This is a simple and delicious recipe, Enjoy!
As I prepared them above, there is a total of approx 575 calories. So if you are good and hungry, go ahead and eat them all! Or share them with a friend for a lighter meal.
