
There is nothing quite like a thick and flavorful dressing to compliment a fresh salad. This one is thick enough to stick to your vegetables, and the mild spices will keep you coming back for more. I use this as a salad dressing and can even make it just a little thicker and use it as a dip.
Ingredients:
1 cup raw cashews
1/4 cup nutritional yeast
1/2 cup water +-
3 T of lemon juice
1 T of red wine vinegar
1 tsp of dried dill
5-6 fresh basil leaves
1/2 tsp garlic
1/2 tsp onion powder
2-3 dried plums or dates (optional but will give it a sweeter flavor)
Put all ingredients in your high powered blender or Nutribullet and blitz until good and creamy. Add the water a little at a time until you reach your desired thickness. Keep in mind it will thicken a bit more after being refrigerated for a couple of hours. I like it to be thin enough to pour, but thick enough to stick to my vegetables. Refrigerate for 2 hrs before serving. This makes approx 6 servings, 150 calories ea. Enjoy!
