
Do you love homemade potato salad, but are on a low carb diet? Cauliflower Egg Salad to the rescue! You won't even miss the potatoes... I promise!
Ingredients:
4 hard boiled eggs peeled and cooled
4 large florets of cauliflower, lightly steamed
1/4 cup of diced white onion
1/4 cup of diced celery
3-4 Tablespoons of your favorite light mayonnaise
1/2 Tablespoon of Splenda or other no calorie sweetener
1 Tablespoon of Dill Relish (or just finely dice up some dill pickles)
S&P to taste
Steam your cauliflower, and set aside to cool. I only steamed mine for 5 min. Don't overcook or it will get mushy. After all ingredients have cooled off, put in bowl and stir gently until combined well. Refrigerate for at least one hour before serving. This makes a great side dish for just about anything. This makes 4 servings at approx 140 calories ea, and 5 net carbs.
Optional Addition: 1 Tablespoon of yellow mustard. I typically don't make my potato salad with mustard so I did not add any to this salad, but I know many people do, If you are a "mustard person", feel free to add it.
