STRAWBERRY PINEAPPLE COBBLER
Ingredients for fruit: 3-4 cups frozen strawberries 1.5-2 cups frozen pineapple (fresh or canned will work just as well) 1/3 cup sugar (or your favorite sugar substitute) 1tsp vanilla extract 3 oz 100% pineapple juice. Stir ingredients well, until sugar is dissolved. Set aside while you make the batter.
Ingredients for batter/crust:1 cup self rising flour 2/3 cup sugar (or your favorite sugar substitute) 1/2 tsp baking powder 1 dash of table salt 1.5 cup of unsweetened almond milk 1t vanilla extract (Whisk dry ingredients together first, then add your milk and vanilla.)
Mix both ingredients separately. The batter should be the consistency of a pancake batter, add more milk or flour as needed. Then lightly spray a non stick 9x12 pan or use a non stick Teflon or ceramic dish. Pour the fruit ingredients over the bottom. Then pour the batter over the top. (DO NOT STIR!!) .Do Not Stir.
Place in preheated 400 degree oven for 45-50 min. Keep checking, when med golden brown on top, remove from oven. Let cool and serve.
