
Lentils are such a delicious addition to any meal. They have an earthy goodness that tastes like a comfort food. I had these for dinner all by themselves, they were so filling. If you have only bought canned lentils, you should give this recipe a try, they are so much better. For this particular recipe I recommend the brown or green lentils. Red lentils cook much faster, but they pretty much dissolve if cooked too long, (they are great in chili) this type however will hold their shape.
Ingredients:
2 cups dried brown or green lentils
4-5 cups hot water
1 bay leaf
1 tsp minced garlic
1 tsp onion powder
S&P to taste
5 drops of liquid smoke or 1/2 tsp of smoked paprika
2 med carrots diced small
1 rib of celery diced small
1 small onion, diced small
Bring to a boil, cover and reduce heat to a simmer. Simmer for about 40-45 minutes until they are good and tender. Remove from heat, cover and let sit for about 10 min. Remove bay leaf before serving. Drain off any excess liquid, or ladle out with a slotted spoon. I like to sprinkle some scallions on top. These are delicious all by themselves, over rice, pasta, on a baked potato, or simply serve with a side salad and some crunchy bread. Enjoy!
