
GREEN BEAN CASSEROLE
No more canned Cream of Mushroom Soup in my Green Bean Casserole! An old family favorite has been veganized! Once you try this healthier version, you will never go back. It is so easy to make a day ahead, then just pop in the oven to heat. Make sure and use fresh green beans for this recipe, not canned. There is a big difference in taste.
4-5 Cups Fresh Green Beans steamed for 6 minutes, remove from heat and run under cold water to stop cooking. Set aside.
Other Ingredients:
1 T of Better than Bouillon Vegetable Flavor or one dissolved veg bullion cube.
1/2 cup water
2 T cornstarch or flour
1/2 of a whole med white onion finely diced
3 cups mushrooms finely diced (with a few sliced thinly for a good presentation)
1/4 cup veg broth for sauteeing.
2 t minced garlic
1/2 cup non dairy milk (cashew milk is really good in this)
S&P as desired
*OPTIONAL 1 Large can of French fried onions (I use these for Christmas and Thanksgiving only as a special treat)
Make mushroom sauce as noted below:
Sautee in the veg broth in deep frying pan the onion, garlic and mushrooms until tender. While sauteing, hand whisk in separate bowl 1/2 cup cold water, Bouillon paste, and corn starch/flour, whisk well together until smooth. When onions and mushrooms are real tender, combine the veg broth mix with the sauteeing mushroom onion mixture, stir with whisk constantly while bringing to a light boil, it will thicken rapidly, add water as needed. Keep it good and thick so it will stick well to the green beans. Add the non dairy milk to lighten up the color a bit and give it a richness. (If you make too much you can turn the leftovers into a fabulous soup by adding more veg broth) Combine the mushroom cream sauce with the lightly steamed green beans, stir well, and if you wish, add the optional 1/2 can of French fried onions at this time, bake in baking dish at 375 degrees for 30 min, Feel free to sprinkle the top liberally with remainder of French fried onions or Panko Break Crumbs or whatever you prefer for a crunchy topping. Panko is shown, but I prefer the French Fried Onions on holidays.
