
Potato Soup, Quick, Spicy, and Easy!
I started off making hash browns one day, but a light bulb went off in my crazy little plant based head, and I thought, "this would make an amazing potato soup". So this is what happened. I was making my favorite hash browns like usual, Frozen diced hash brown potatoes, about 4 cups, with 1/2 cup peppers, 1 T rooster hot sauce, and 1/4 cup diced onions, as I was frying it up, I decided halfway through that it MIGHT just make a great potato soup, so I changed things up!... in a large measuring cup, I whisked 3 cups unsweetened cashew milk with 2 T corn starch, 1 t onion powder, 1 t garlic powder, and 1/2 T of Better than Bullion Veg paste, a dash of s&p, and added it to the fried Potatoes, Peppers, and Onions, that were already tender, then simmered while stirring often until thick and creamy. Turned out amazing! Very creamy, full of flavor, and so easy.
