Here is a delicious ranch dressing. I also make one out of tofu, but I know many people eat a soy free diet, so I decided to make another version of it which is just as delicious.
Ingredients:
1/2 cup cooked white northern beans
1/2 cup water
1/2 cup unflavored, unsweetened almond milk
1/4 cup raw cashews (optional)
2 pitted dates or 2 Tablespoons sugar
1/2 tsp dried dill
1/4 tsp oregano
1/4 tsp parsley
1/4 tsp garlic powder
1/4 tsp onion powder
2 Tablespoons Apple Cider Vinegar
Put all ingredients into a high speed blender, or nutribullet and blend until creamy. Add more beans if you like it thicker, or more water if you like it thinner. Refrigerate for at least one hour before serving. Makes 6 generous servings, approx 80 calories each.
