These were so good I ate the whole batch myself. If you are sharing, you may want to double this recipe. :)
Ingredients:
1 can of whole Hearts of Palm
1/4 cup of Italian dressing (use your favorite, I used Kraft Fat free)
1 T of minced garlic
1 T of red wine vinegar
Breading:
1/2 cup almond flour
1/2 T kelp granules
1/2 T Old Bay Seasoning
S&P to taste
Slice the Hearts of Palm into scallop shapes, then marinate in the Italian dressing, garlic and vinegar for 8 hrs in the refrigerator. Drain off excess, then roll each "scallop" into the breading mixture until well coated. Place into air fryer or convection oven for 10 min at 400 degrees, shake, then give it another 5 minutes until breading is well browned.
This is great served over your favorite salad. I enjoyed with my kale salad, a sliced avocado, and my tofu ranch salad dressing on top..
