CHIK'N FAJITAS
Some nights you just have to keep it simple. Tonight was one of those. I was thinking of having a veggie wrap but wanted something hot so I came up with this. Soy curls are an amazing product. If you have never tried them, you owe it to your plant based self to order some. Link provided below. Very versatile product, and the texture is very much like chicken when cooked correctly.
Ingredients:
1 cup Butler soy curls
2 cups veg broth warmed in microwave
1/2 tsp poultry seasoning
1/2 cup salsa
1/4 of yellow or red pepper sliced thinly
1/4 of small white onion sliced in slivers
S&P to taste
Rehydrate your soy curls in the warmed veg broth for 15 min. Do not drain. Slice up your peppers and onions. Add curls, onions, peppers, and spices to hot skillet including the veg broth. Cook on med high heat and add the 1/2 cup salsa after 10 min. Heat on med until all liquid is cooked away, about 10 more min, then use a spatula and keep smashing your soy curls and let it brown real good, keep your eye on it so it does not burn. Serve hot and sizzling from the skillet onto your flour tortilla, you can top with more salsa, onions, or vegan cheese and/or some vegan sour cream if desired. Enjoy this easy and delicious weeknight dinner. A great side dish to serve with it would be some refried beans! Oh, yummo... I think I'll go back for seconds. Makes 3 good size tortillas, approx 65 calories ea not counting tortilla.
