You know by now how much I love my seitan. Today I decided to add a can of jackfruit, because I also happen to love that. The combination of these two together created an awesome texture that can be used in many dishes. You can eat it as is, sliced up and served with your favorite side dishes, or chopped up and added to soups, put in taco's, wraps, or stir fries. The possibilities are endless.
Wet Ingredients:
1 cup water +-
2 T apple cider vinegar
2 T soy sauce (do NOT use if you want a white roast)
2 T Peanut Butter
2 Tablespoons Liquid Smoke
1/2 of medium white onion
1/2 of medium yellow pepper
S&P to taste

1 10 oz can green jackfruit in water or brine, rinsed well
Dry:
1 1/2 cups VITAL WHEAT GLUTEN (no substitutes for this, it is "vital" to the recipe)
1/2 cup Coconut Flour or whole grain flour of choice. (almond flour is also good)
1-2 tsp garlic powder or to taste
2-3 Tablespoons Mrs. Dash Chicken Seasoning (I used 3)
1 tsp rubbed sage
4 T nutritional yeast
1.5 tsp parsley
1 tsp Italian seasoning
S&P to taste
Put all wet ingredients except for the jackfruit in a blender, or food processor and blitz until well combined. Add the can of jackfruit and pulse once or twice just to break it up, (you want the texture from it so do not overprocess) Set aside.
Put all dry ingredients in large bowl and mix well. Make a well and add the wet ingredients a bit at a time. It will firm up quickly. Mix with a spoon at first, then use hands to knead for about 5 min. Form into a loaf shape that will fit in your pressure cooker. Roll the loaf shape into foil, sealing ends. Place in pressure cooker full of hot water, and cook on high pressure for 30 min, natural release. When done, remove and you can slice pieces up and pan fry them to get the sides browned, or chop up and use in stir fries, etc. Delicious flavor and great texture. It makes a great sandwich with a bit of bbq sauce on it. This is a very moist and delicious seitan. Enjoy!
