Potato, Mushroom and Spinach Stew
Ingredients:
1 white onion chopped finely
2 stalks fresh celery, chopped finely
6 med white mushrooms, sliced or diced whichever texture you prefer
4 russet potatoes or red potatoes, peeled and cut in stew size chunks
1 T minced garlic
2 vegetable bullion cubes or one T of Better Than Bouillon Veg or No Chicken flavor
3 cups water
1 tsp Italian seasoning
1/2 cup Macaroni, any kind you like, shown are gluten free rice/corn macaroni.
S&P to taste

3 cups fresh spinach, finely diced
1T corn starch
1T flour of choice
1 cup almond milk
Cook on stovetop, bring water to boil, add all top ingredients and simmer for 20 min covered or until potatoes are getting tender, then add noodles last 10 min. Then whisk your corn starch, flour and almond milk together, and stir in for 3 minutes until thickened. I like to put a few chopped scallions on top. So delicious. This one is a winner! Serve with your favorite crusty bread. 5 servings of approx 395 calories ea.
