BAKED PEARS WITH PECANS
A sweet heavenly treat you can feel good about.
Ingredients:
2 Bartlett Pears, sliced in half (peeled or unpeeled, your preference, but be sure to scoop out the seeds and hard core)
2 teaspoons Sugar
4 T chopped Pecans
Dash of Cinnamon (less than 1/8 tsp)
Wash and cut pears in half. Scoop out center core with seeds with a large tablespoon and discard. Sprinkle the sugar over each one, Put one T of chopped pecans (or walnuts if you prefer) in each pear. Sprinkle with cinnamon. Put in baking dish with about a 1/4 cup of water. Cover with foil, and bake at 400 f for approx. 40 min or until fork tender. Uncover and brown for additional 7 min. Delicious as is, but also for a special treat, you can add a T of vanilla dairy free yogurt just before serving. (The Silk brand is amazing.) Enjoy!
You can also use brown sugar or maple syrup if you like, it is still just as delicious, but don't forget the cinnamon!
With the sugar and pecans topped with yogurt, it makes 2 servings, approx. 300 calories each.
