BAKED PEARS WITH PECANS
A sweet heavenly treat you can feel good about.
Ingredients:
2 Bartlett Pears, sliced in half (peeled or unpeeled, your preference, but remove the seeds)
2 T Brown Sugar
4 T chopped Pecans
4 T Maple Syrup
Dash of Cinnamon (less than 1/8 tsp)
Wash and cut pears in half. Scoop out center core with seeds with a large tablespoon and discard. Sprinkle the brown sugar over each one, Put one T of chopped pecans (or walnuts if you prefer) in each pear. Drizzle maple syrup over the top, sprinkle with cinnamon. Put in baking dish lined with parchment paper with about a 1/4 cup of water. Cover with foil, and bake at 400 f for approx. 40 min or until tender. Should be fork tender. Uncover and brown for additional 7 min. Delicious as is, but also for a special treat, you can add a T of vanilla dairy free yogurt just before serving. (The Kite Hill brand is amazing.) Enjoy!
