Bring in the New Year with these black-eyed pea falafels! These are a healthy treat. Serve them up on a sandwich with your favorite sauce, or serve with pasta, rice or just some steamed vegetables like cabbage or kale. You can make falafels out of any type of bean and spices you prefer, but give the black-eyed peas a shot. They have a hearty goodness that other beans just don't have Mixed with the spinach and spices, they are so yummy,
Ingredients:
1 8-10 oz can blackeyed peas drained
1 T dried onions, or 1/4 cup minced fresh onions
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cumin
1/4 tsp basil
1/4 tsp parsley
S&P to taste
1/4 cup fine bread crumbs
1/2 cup cooked white or brown rice
1 cup of fresh spinach chopped finely
1/4 cup nutritional yeast
Put your beans in a bowl, and smash up well with fork, a few chunks left behind are fine. Add the rest of the ingredients except for nutritional yeast. Form into balls and roll in the nutritional yeast, then place on parchment paper on baking sheet. Bake at 400 degrees for 30-40 minutes, turning occasionally or until well browned and crunchy on the outside, firm but tender in the middle. If you have an air fryer, these are EXCELLENT in the air fryer for about 17 min, shaking once. I enjoyed these as an appetizer dipped in some bbq sauce but use your imagination!
