If you like quiche but you think it is a pain to make... think again. This one is so simple. It is full of delicious flavors that all mingle together so well. You can serve it with some toast and jam, or for brunch, a side salad would pair nicely. Enjoy!
Ingredients:
6 Eggs
4 large mushrooms diced
1/2 large red onion diced
3 cups fresh spinach chopped finely
1/2 red pepper diced
10 cherry tomatoes diced
2 Tablespoons Salsa
S&P to taste

2 Tablespoons Shredded Mozzarella (I used non dairy, but use what you like)
1 Tablespoon Nutritional Yeast
Whisk your eggs together, and put in a square baking dish. (You may need to do a light coating of oil spray if it is not a non stick pan). Add the rest of the ingredients and mix well. Cover with foil and bake in a 400 degree oven for 30 min. Then remove the foil and bake for an additional 12-15 minutes. Let cool slightly before serving. Delicious!
