
Mushrooms, Crunchy Mushrooms, Baked, No Oil!
Ingredients:
1 pound Mushrooms.
The batter Ingredients:
2 cups+- non dairy milk,
1-1.5 cups of your favorite flour, (I used wheat flour)
1 T flax meal,
1tsp all purpose seasoning, or creole seasoning for a little extra kick.
1-2T Sriracha
S&P to taste.
You will also need 10 oz Panko bread crumbs to roll them in after the batter.
Preheat oven to 400 degrees. In small bowl mix the non dairy milk, then flour, hot sauce, and seasoning. Add more or less, but make it about the consistency of a med thick pancake batter. You want it to stick well to your mushrooms... Dredge each whole mushroom through the batter, then coat well with Panko in large dish. Put on baking sheet with parchment paper. Bake at 400 for 15-25 min each side turning once or as needed. If you have an air fryer, these are EXCELLENT in the air fryer for about 17 min, shaking once. Oven temperatures and times may vary. Bake until med golden brown.
Serve hot from the oven with your favorite honey mustard sauce, barbeque sauce, ketchup, tofu ranch, or sweet and sour sauce. I use this same batter and coating for many different things, broccoli, cauliflower,etc... and it always turns out great. The pic below shows some mushrooms, and also some broccoli florets I used the same batter and technique on. So delicious! Use your imagination. I hope you enjoy as much as we do.
