BBQ Ribz, made with Seitan
Now I usually simmer my seitan for about an hour then do a variety of things with it, but this recipe is a bit different. It is a modification of a number of different recipes I found online, I just made it my own... and I suggest you do the same thing. Use your own favorite spices and bbq sauces to give it your own personal signature.
Ingredients:
Dry:
1 cup Vital Wheat Gluten (do not substitute this with anything else)
4 T Garbanzo Bean Flour
1 t Mrs Dash Chicken Flavoring
1 t Poultry Seasoning
1 T Nutritional Yeast
1 t garlic powder
1 t onion powder
S&P to taste
Wet:
1/4 cup Veg broth
3 T Soy Sauce
1 T Tahini or Natural Peanut Butter
1/2 t Liquid Smoke
2 T Natural Ketchup
Combine dry ingredients well. Combine wet ingredients well. Combine wet and dry ingredients together and stir very will, then use your hands and really knead the dough for a couple of minutes. Put back in bowl, cover and let sit for 5 min. Prepare baking sheet with parchment paper. Preheat oven to 375F. Spread thin layer of dough onto the parchment paper, and use your fingers to make raised lines (like the bones in traditional ribs). Using a pastry brush, brush a thin layer of your favorite bbq sauce over the top. Bake for 15 min, flip over, coat other side, and bake for another 15 minutes. Then cut into rectangular pieces and put in baking dish, top with more bbq sauce, stir around a bit, and bake uncovered at 400 degrees for about 20 minutes until edges start getting crunchy. This makes a really good bbq sandwich... This makes 4 servings, approx 340 calories ea. Enjoy!
