
I have been wanting to make a creamy tomato soup for a long time, and I finally got around to it. This reminds me of the old Campbells Tomato Soup that you made with milk, very similar flavor profile. But of course, this one is full of whole foods, no preservatives, and absolutely delicious.
Steam all vegetables except for the diced tomatoes until really tender. Mine took 12 min in a steamer in the microwave. Put steamed vegetables in nutribullet or blender along with the can of tomatoes, and 1 tsp minced garlic, optional cashews, and salt and pepper to taste. Add the water a quarter cup at at time to get the right consistency. Pour into a saucepan and heat until bubbly hot. This whole thing is only about 260 calories, (300 calories if you use cashews instead of potato) and full of nutrition. Enjoy!
- 8 oz, Diced Tomatoes (original Rotel Diced Tomatoes with Green Chilies is best)
- 1 medium potato or 1/4 cup raw cashews
- 2 medium Carrots
- 1 cup, chopped, Cauliflower
- 1 cup (8 fl oz), Water
- 1 stalk (7-1/2" - 8" long), Celery
- 1/2 White Onion
- 2 Tablespoons roasted red pepper (jarred packed in water)
- 1 tsp minced garlic
