Burritos
These just never get old. They are on a regular rotation at our house. Yes, you can still enjoy your Mexican food while eating a plant based diet, and let me tell you, this is a good example of what you can enjoy on a regular basis. This is a simple recipe, but so delicious.
Ingredients:
1 pkg of 8-10 fat free, (or lowfat) flour tortilla wraps
1 8 oz can of black beans, drained and rinsed
1 cup frozen corn
1 small can of Rotel diced tomatoes drained
1/2 of white onion finely diced
1 med red or green fresh pepper finely diced
1 packet of taco seasoning, (or use your own homemade mix of chili pepper, cumin, etc...)
1.5 cups of previously cooked white or brown rice
Saute' the onion and pepper in some veg broth until almost tender, then add the frozen corn, tomatoes, and taco seasoning. Add more veg broth as needed to keep it from sticking. When heated through, add the rice and stir thoroughly. Remove from heat. Prepare baking sheet with a light coat of spray or use parchment paper etc... Put approx. 1/2 cup in center of tortilla, roll up bottom, then sides, then finish rolling, place on cookie sheet seam side down. Bake at 400 degrees for approx. 30 min turning once, until good and crunchy. If you have an air fryer, these are EXCELLENT in the air fryer for about 17 min, shaking once. 5 servings of 2 burritio, approx 265 calories per serving. Serve with your favorite salsa, guacamole, enchilada sauce, or try dipping into my delicious Cheezy Sauce.
