Here is a simple plant based burger you can throw together anytime, or make a big batch and freeze them.
Ingredients:
1 can Chickpeas rinsed and drained
1 small size cooked potato (or 1 cup steamed cauliflower florets for a lower calorie burger)
1 cup fresh spinach
2 cups chopped mushrooms
1/2 large red onion
1 cup quick oats (uncooked)
2T teriyaki sauce
S&P to taste
In skillet, simmer spinach, mushrooms, onion and spices. Cook until tender, then put into a food processor with one can chickpeas and one cooked potato (or cooked cauliflower), Mix with one cup quick oats, the teriyaki sauce, and any other spices you like. Patty into burger shapes, bake 30 min at 425 turning once or until until brown and crispy, Eat some, freeze the rest! Build your burger how you like it, shown is a bit of vegan cheese, pickles, onions, lettuce, tomato, ketchup, mustard. This makes 6 large patties, approx 140 calories ea, when made with cauliflower, 160 ea when made with potato. Enjoy!
