Garbage Soup? I know, what kind of name is that? I've called it that for years, some call it Refrigerator Soup, Leftover Soup, and many other names. It changes every week and there is no real recipe although I seem to do a few things the same each time. I usually make this a day or two before garbage pickup, I cannot bear to throw out fresh vegetables that are still good, just not enough left of each one to make something major with. This batch I had carrots, sweet potatoes, green beans, onions, red peppers, and mushrooms, then I simply dressed it up.
Ingredients:
1 red pepper, diced
3 large carrots diced
2 large sweet potatoes diced
1/2 red onion diced
1.5 cups fresh green beans, diced
8 large white mushroom, sliced
3 stalks of celery, diced
6 cups water +-
1 T Veg Bouillon
1 tsp Liquid Smoke
1 cup dry kidney beans, rinsed, sorted, soaked in hot water for one hour

1/2 cup cold water with 3 T corn starch whisked and dissolved into it.
3 cups chopped spinach
1 cup elbow macaroni
S&P as desired
I cooked mine in a pressure cooker. There are many good safe electric pressure cookers on the market, I happen to love mine, it is the Power Pressure XL. That thing is a workhorse!
Add 2 cups water and cup of kidney beans to pressure cooker, bring to pressure and cook for 30 min. Manual release, Then add all of the rest of the top ingredients and bring to pressure again and cook for 15 min natural release. Be sure not to go over the maximum line in your pan. When pressure is released and you can remove the lid, stir well, then add the corn starch/water mix, spinach and macaroni, let it simmer just until the noodles are done, keep stirring as the corn starch will thicken up into a delicious gravy. Add additional salt and pepper, and serve.
I really enjoy the combo of sweet potatoes with the beans in this one. But I have made it many ways, and I always enjoy my "garbage soup". This particular batch made 6 servings of approx 350 calories ea.
If you don't have a pressure cooker and want to make it on the stovetop, use canned beans instead of dried, add the canned beans to all the top ingredients and cook for about 30-40 on stovetop, then follow the rest of the procedure the same.
