What better side dish to your Veggie Burger than some delicious creamy potato salad? None that I can think of! This is a vegan version of course, with all the flavor of the old way, but a lot more healthy!
Ingredients:
4 med russet potatoes, cooked peeled, and diced. (I like to make these in my electric pressure cooker, 12 minutes natural release)
1 cup Vegan Mayo, use your favorite or my Tofu Mayo
1/4 cup Sweet Pickle juice
1/4 of med diced white onion
4 stalks of celery diced
1-2 T of sugar
S&P to taste
1 tsp of dried dill
In large bowl, mix well all ingredients except for the potatoes. Once combined, stir in the potatoes until thoroughly mixed, then refrigerate for at least one hour before serving. This is a simple potato salad with a mild sweet flavor that does not overpower whatever you are serving with it. Great with Veg burgers! Some folks like to add a bit of pickle relish into theirs, that is not my thing, but if you like yours that way... go for it! Enjoy!!
