Chickpea Nuggets
Ingredients:
1 12 oz can Chickpeas, drained and rinsed
1/4 cup raw onion
1/4 cup celery
1/4 tsp poultry seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1 tablespoon of self rising flour
1 tablespoon vital wheat gluten
Dash of Italian seasoning
Water, Use T as needed
1/2 cup Panko bread crumbs, divided in half
S&P to personal taste
In food processor, add the chickpeas, and everything else but just 1/2 of the panko. Pulse until well combined adding the water a tablespoon at a time to get to a moist consistency that can be shaped together.. Form balls, then flatten out to resemble nuggets. Put the other 1/4 cup of panko in a dish with an extra dash of the poultry seasoning, and stir. Roll each nugget in this, then place in air fryer. I cooked at 325 degrees for 15 minutes, then turned them gently and cooked for an additional 10 minutes until golden brown and crunchy. I found these were delicious dipped in a honey mustard sauce, but use what you like, bbq sauce would be great too. This makes approx 12 nuggets. 2 servings of approx 230 calories each not counting any dipping sauce.
Honey Mustard Sauce: 2 tablespoons of your favorite mustard, mixed with 4 tablespoons of honey. Combine well.
