Ingredients:
1 12 oz can Chickpeas, drained and rinsed (reserve liquid)
1/4 tsp poultry seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
Dash of turmeric
Dash of Italian seasoning
Aquafaba (liquid from can of beans) Use T as needed
1/4 cup and another 1/4 cup corn meal
1/4 cup Panko
1 T Vital Wheat Gluten
S&P to personal taste
Smash up your Chickpeas well with a fork or use a food processor. Add the seasoning and mix well. Then add the 1/4 cup of corn meal, and the T of vital wheat gluten, mix with spoon, then use your hands to mix it up well, at this time add T's of the aquafaba until it comes to a good consistency that you can ball up. I used about 3 T. (You can use other type of egg substitute but I found this to work well) Form balls, then flatten out to resemble nuggets. Put the other 1/4 cup of cornmeal in a dish with the panko and stir. Dip each nugget in this, then place on parchment paper on cookie sheet and bake at 425 degrees for about 20-25 min flipping once or until lightly brown and crispy. These turn out crispy on the outside, but tender in the middle, really good dipped in your favorite bbq sauce.
