I love a thick and creamy salad dressing. I want it to stick to my veggies with every bite. This slightly sweet and rich dressing does just that. I may be addicted, and luckily it is super easy to make. If you are looking for a delicious dip, just make it a bit thicker.
Ingredients:
1/2 cup raw cashews (soak for a few hours first if you have time)
1/2 cup water
1 T of Natural Peanut Butter
1/4 cup of 100% fresh orange juice or freshly squeezed orange
2 T of 100% Pure Maple Syrup
1/8 tsp minced ginger
1/8 tsp garlic powder
S&P to taste
Combine all ingredients in blender until very well blended. Hint: put the peanut butter in last so it doesn't stick to the bottom. Add a bit more water if necessary to get the consistency you like. I like it pretty thick as shown in the photo. Refrigerate for about an hour before serving over your favorite salad. Makes approx. 4-6 servings. Enjoy!
