
Curry Rice with Vegetables, A One Pot Dish
6 whole mushrooms diced small
1 whole white onion diced small
1 cup of uncooked jasmine rice
2 cups fresh or frozen broccoli florets
2 T fresh scallions chopped finely
1 med tomatoes diced small
1 small green pepper diced
2 sprigs of fresh basil chopped
1 heaping T of curry powder.
1/2 can of coconut milk (approx. 6 oz)
1 tsp of ginger paste
1 tsp of minced garlic
S&P to taste
3 cups of Veg Broth
Put everything in a deep dish skillet EXCEPT for the coconut milk. Cover tightly, bring to a boil, then simmer on low for 15 min. If you prefer your veggies more on the crunchy side, add them after cooking the rest for 8 minutes. Add more veg broth when needed to keep good and moist. Then remove lid and add 1/2 can of coconut milk, stir well and simmer for 5 min. Then remove from heat and let sit for 5 min covered. Serve and enjoy this delicious main dish. Serve by itself or with a fresh side salad. Top with some fresh scallions, cashews, or whatever your heart desires.
