Most of us really love bread including me! I make a lot of different types of breads using yeast and sometimes letting it rise for hours, even overnight. But I wanted something very fast I could make that would taste great. Now this bread does not have a "yeasty" flavor since there is no yeast in it, but it is so darn delicious! The texture is great, more like a huge biscuit. Maybe I should have called it Biscuit Bread! There is no rise period, no kneading, and no lengthy prep. You can mix it up and have it in the oven in about 5-10 minutes. Fresh bread whenever you want it.
Ingredients:
2.5 cups Self Rising Flour*
1/2 teaspoon salt
1 tablespoon Sugar
1/2 cup of non dairy milk (regular milk would work fine too)
1/2 cup water
1 tablespoon olive oil. (optional but will make for a more moist bread)
Preheat oven to 350 degrees F. All amounts are approximate, this is one of those recipes you need to eyeball to get the right consistency. Add the liquids a bit at a time. Mix all ingredients in a bowl with a large spoon. Then use your hands to get in there and really mix it up, squeezing it through your fingers. It should look quite lumpy and wet. This is not the type of dough that will be kneadable or something you will roll out. It should look more like a very thick and lumpy pancake batter. Once well combined, simply put in a prepared loaf pan, and spread the top smooth. Bake for 30-45 minutes, then turn the heat up to 375 degrees, and bake an additional 15 minutes or until golden brown on top. Let this cool completely on a wire rack before slicing. I highly recommend using an electric knife. It makes a great bread for sandwich's or just to eat with your favorite topping. Enjoy!
If you slice it into 10 slices, they are approx 120 calories each. If you slice it thin with an electric knife, you can easily get 20 slices at only 60 calories each.
* I have tried to keep this recipe super simple by using the self rising flour. However, if you don't have any and you are craving some quick bread, you could always use a good all purpose flour combined with 1 tablespoon of baking powder, and double the salt.
