Aren't holidays great? A time to come together with the family and enjoy a delicious meal together. Probably my favorite part of any holiday meal is the mashed potatoes and gravy. I make it for most holidays. This is my special occasion gravy... It is rich, delicious, full of flavor, but still oil free and healthy. I like to leave it with lots of little bits of the mushroom and onions, but you could always blitz the
whole thing in the nutribullet if you prefer a smoother creamier gravy.
Ingredients:
2 or 3 cups chopped mushrooms
1/2 chopped onion
1 T Vegetable Better than Bullion
1 tsp minced garlic
1 tsp thyme
1 T flour
2 T corn starch
1 cup unsweetened almond milk
2 cups water
Simmer onions, garlic, and mushrooms until tender, add spices, veg bullion, and flour, cook for a few minutes until slightly brown, add liquids, whisking constantly until thickened. Add more or less water to get to your desired thickness. Salt and Pepper to taste. Click on video below to see it in action.
