This has become one of my very favorite things to eat to start my day off right. Whether that is first thing in the morning or 2pm, I enjoy it every time. You can really change up this recipe with whatever vegetables you have on hand. I always have a mixed salad I make up every week of kale, green cabbage, and carrots so I used that as my base. It is also good with cauliflower, and broccoli. You can add bacon, or veggie bacon like I did, or really whatever you want. It's so versatile, you just can't screw this up. This is a single serving so double or triple the recipe if you are cooking for more than yourself.
2 cups of raw mixed vegetables. (I used kale, carrots and green cabbage diced finely)
1/4 of fresh chopped red sweet pepper
1/8 tsp onion powder
1/8 tsp garlic powder
S&P as desired
1 slice of Morningstar Veggie Bacon diced up. (optional but adds a lot of flavor)
1-2 tablespoons of your favorite cheese, dairy or non dairy
1 HEAPING tablespoon of self rising flour
1/3 to 1/2 cup of liquid eggs or 1-2 eggs (Liquid Eggs are lower in fat and calories and work great in this recipe)
Mix all together in bowl, then pour into a hot prepared skillet. Cover and cook on low for 10 min. Then flip and cook another 10 minutes uncovered. Serve and enjoy. One serving as shown is approx 185 calories, and so delicious.
Just for fun, try it in a waffle maker! It will give your veggie fritter a much crunchier texture, I loved it.
