SPAGHETTI SQUASH, STUFFED SOUTHWESTERN STYLE
1 med Spaghetti Squash
1 10 oz can Black Beans drained and rinsed
1/2 white onion diced
1.5 cups fresh or frozen corn kernels
1 10 oz can diced tomatoes liquid included
1/4 t cumin
1/4 t chili powder
1/4 t onion powder
1/4 t turmeric
S&P to taste
Cut Squash in half, clean out all seeds, salt and pepper, then roast in oven cut side down for about one hour at 400 degrees, or until tender. You can also cook the entire squash in an electric pressure cooker for 15 min, natural release, then slice in half and remove the seeds. Set aside to cool. Use fork to remove the flesh of the squash into strands and put into large bowl, combine squash strands, onion, beans, corn and tomatoes. Stir in the spices at this time, (you could also just use a packet of taco seasoining) For a fun way to serve, use the squash skin as your bowl. Spoon into your squash skins, or put into a casserole dish, it will taste the same either way. Bake at 400 degrees for 30-40 min until heated through and onions are tender. I topped mine with nutritional yeast, you could use some vegan cheese if you like as well. I served it with some toasted bread spread with roasted garlic. This was a very delicious and filling meal! Enjoy.
This makes 4-6 large servings. If not serving in the "squash bowl", simply combine all ingredients in a casserole dish.
