SWEET POTATO CHILI
Ingredients:
1 grated or cubed sweet potato, peeled
1 white onion minced
1 diced yellow or red pepper
32oz of veg broth or water and one veg bullion cube
28 oz can diced tomatoes or tomato sauce
4 T tomato paste if using diced tomatoes
2 15 oz cans of *beans (drained and rinsed), black and kidney or beans of choice
(or use 1/2 to 1 cup dried beans if using crockpot and will be slow cooking all day)
1 cup of frozen corn
1 packet of chili seasoning or 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika
2 T of unsweetened 100% cocoa
1 tsp of minced garlic
Three ways to make, and all are delicious. On the stovetop, in a crockpot, or in a pressure cooker! Put all ingredients in crockpot and let simmer all day until beans are tender. You can also make it on the stovetop. Put onion and pepper in deep skillet first, simmer for a few minutes then add veg broth, the rest of the ingredients, and simmer for 30 min, I like to serve this up with some crumbly cornbread,, and freshly diced onion. This makes about 6 servings, approx 330 calories ea. (not counting cornbread) For pressure cooker version, please view video below.
