I was inspired to make this recipe after making my Cauliflower Fritters. Those were so delicious that I decided to incorporate even more vegetables and make it into a pie. One try, and I am hooked. This is so easy to make. There is no cauliflower in this recipe, but you can certainly add some if you like. There is a lot of cabbage, and you could not even taste it. This is a great way to get your veggies in. I ate half this pie myself, but half the pie is only 376 calories, so this is something you can really indulge in, and enjoy every bite.
Ingredients
Preheat oven to 375 degrees. Combine all of the vegetables in a large bowl. In a separate bowl mix your eggs with the mayonnaise and spices. Pour over the mixture. Add the almond flour directly on top. Stir very well to combine everything. Place in a shallow casserole dish or pie plate, lightly oil if not non stick. Add small dollops of the cream cheese over the top and sprinkle with the Nutritional Yeast. Cover and bake for 15 min. Then uncover and bake for an additional 15 min. until hot, bubbly, and golden brown. Let cool for just a few minutes, and slice and serve. 2 very generous size servings. 376 calories and 13 net carbs. So delicious.

- 1.5 cups, sliced thinly Broccoli Florets
- 4 large mushrooms diced small

- 4 Tb chopped red or yellow peppers
