As you may have noticed by now, I love soup. All kinds of soup. This one turned out especially tasty so I thought I would share. I made it in my electric pressure cooker, but you could easily make it on your stovetop, or even in the crockpot. *Times will differ obviously depending on your choice, but the electric pressure cooker is the fastest.
Ingredients:
2 cups sorted and rinsed Great Northern dried beans (I usually soak overnight)
1/4 med white onion diced
5 cloves garlic diced
1 cup diced carrots
1 rib celery, diced
1 large yukon potato peeled and diced
4 large fresh brussels sprouts shredded
4 large cauliflower florets, shredded
1/2 small fresh red pepper, diced
1/2 tsp Italian seasoning
1 T Better than Bouillon Veg Paste
1 tsp Liquid Smoke or a bit more if you like a really smoky flavor
4 cups hot water or more... make sure all is covered with at least 1.5" of liquid
S&P to taste

1/2 cup non dairy milk (I like cashew milk) mixed with 1 heaping T of cornstarch or flour
Preheat the electric pressure cooker, lid off on the bean setting. Add 1/2 cup hot water, the onions, and garlic, and simmer while chopping up the rest of the vegetables. Once onions are getting tender add everything else except for the milk/cornstarch. Stir well, put lid on, and cook for **30 min high pressure bean setting for, natural release. Remove lid once pressure is released and add the milk/cornstarch mixture and simmer until thickened. If you were a fan of Campbells Bean with Bacon Soup, you are sure to love this... taste very similar.
Once thickened, serve immediately, garnish shown is chopped green onions. This makes 4 servings, approx 350 calories ea.
*If you wish to make on stovetop, consider using canned beans to shorten cooking time. If you make it in a crockpot, soak your beans overnight, then put on high for about 7-8 hours or until beans are good and tender, then add your cornstarch mixture and cover and cook for about another hour until thickened.
**If you do not soak your beans overnight, they will take longer to cook, add 15 min cook time to the pressure cooker, or allow additional time on stovetop or crockpot.
I like to top with different things, shown below topped with a diced baked blue potato and scallions. I love pretty food!
