Oh, this is Heavenly. It is a sweet treat, but much healthier than many. This is one of the few recipes that I do add a small amount of olive oil. I think in this case it adds a lot to the texture. I hope you enjoy this as much as I do.
Ingredients:
1 medium zucchini peeled and grated (approx 2 cups)
2 eggs
1 cup sugar
1 tsp vanilla
Pinch of salt
1-2 Tablespoons of olive oil

2.5 cups All purpose Flour
1 Tablespoon of ground cinnamon
1 tsp of Pumpkin Spice
1 Tablespoon of Baking Powder
1 cup Chopped Walnuts
In large bowl, put in all of the top ingredients, and stir well. In separate bowl, mix the dry ingredients. Combine the two bowls and stir well. Preheat oven to 350 degrees. Line a loaf pan with parchment. Pour batter into the pan, and bake for approx 45-55 minutes or until toothpick comes out clean. Let cool completely before slicing. This makes 12 slices at approx 300 calories each. Enjoy!
