
We have Tuna Noodle Casserole fairly often and like it, but we really enjoy most types of seafood. So, I decided to change it up. This turned out so delicious I have made it twice this week. We now have this Shrimp Casserole on a regular basis.
Ingredients:
12-16oz Cooked Shrimp, Peeled, Deveined and No Tail. Chopped into bite size pieces.
1.5 cups uncooked pasta. (I use Rotini, but use your favorite)
1 can of Cream of Celery Soup
1 can of Water
2.5 cups of raw broccoli florets (small pieces)
1/4 cup of chopped white onion
1 TB of minced garlic
1/2 of Red Pepper chopped
1/2 tsp Old Bay Seasoning
S&P to taste
1 cup shredded cheese
1 cup bread crumbs
In large bowl mix all ingredients (except cheese and breadcrumbs) chopped into bite size pieces. Put in prepared 9x9 baking pan. Top with cheese and cover with foil. Bake at 400 degrees for approx 30 minutes. Top with breadcrumbs and continue baking until browned. About another 10 minutes. Enjoy! We never seem to have leftovers with this one.
