I love shrimp, well, all seafood really with just a few exceptions. If you enjoy shrimp as well, you will most certainly like these. To make it quick and easy, I chop up everything in the food processor to save time and energy. There is something about a seafood patty that really satisfies, whether it is crab, shrimp, salmon, tuna or anything else. You get the taste of the sea, with the crunch from the breading. I like to put these in the air fryer, but you could certainly fry them on the stovetop with oil, but the air fryer is your lower calorie choice.
Ingredients:
12 oz large shrimp, cooked, deveined and peeled
1 carrot
1 rib of celery
1 shallot
2 tablespoons chopped white onion
1 small red pepper
1 jalapeno pepper (1/2 the seed removed)
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp Old Red Bay seasoning

3/4 cup Panko breadcrumbs
1/4 cup sharp cheddar
2 eggs
S&P to taste.
1 tsp minced garlic
3 Tablespoons fresh minced parsley
Air fry at 400 degrees, after 10 minutes, flip and bake for another 7 min or until med brown and crunchy on the edges.
Mix all top ingredients. (I chop mine up pretty finely in the food processor, but you can hand chop them if you like) Once well mixed, add the bottom ingredients and use your hands to combine them well. Refrigerate for one hour before making into patties.. Once pattied up, put in airfryer in single layer and airfry at 350 degrees for 20 minutes flipping halfway through. It makes 8-10 patties, so you may need to do two batches. They are done when well browned and crispy.
These are so delicious. I like to dip them into a cocktail sauce/mayo mixture, but use your favorite seafood dipping sauce. Enjoy! These are approx 200 calories each, and can be eaten alone or on top of your favorite salad or even in a bun for a shrimp cake sandwich`.
Optional dipping or drizzle sauce: 1 Tablespoon Cocktail Sauce and 2 Tablespoons Light Mayo
Combine well and drizzle over the top, or dip your cakes right into it.
