
I was inspired to make a seitan beef roast this evening watching my husband cut into his real steak. I didn't want a real steak, of course, I would most likely gag on it. But I wanted something that I could put some of that delicious steak sauce on. So... Seitan Beef Roast it is!
Ingredients:
Wet:
1/2 can black soy beans, or regular black beans.
6 oz canned diced tomatoes juice and all
1/4 cup diced raw onion
1 small yellow or red pepper roughly diced
2 tsp Mrs. Dash Grillers Steak Seasoning
1 T apple cider vinegar
2 T of steak sauce (I used a generic brand)
1 tsp minced dried onion
1 tsp dry garlic
1 T barbeque sauce
1 T Liquid Smoke
S&P to taste
Dry:
2 cups vital wheat gluten
1.25 cups almond flour
.25 cup nutritional yeast
Put all wet ingredients in blender and blend until completely pureed and creamy. Mix dry ingredients in a bowl and then add the wet ingredients to it a little at a time until well combined. Don't feel you have to use all the wet ingredients, just work it a little at a time until you get the right consistency. Knead the dough for 3-4 minutes until it starts firming up, put back in bowl to rest for a few minutes. I then rolled this into a roast shape and placed it loosely in foil, (allow a little room for expansion) I did add a bit more sprinkle on the top with some of the steak seasoning. I then put this in the crockpot covered in water, and cooked for 8 hours. After complete you can slice up in steak slices and fry them to crisp them up a bit, or cut into very thin slices (electric knife works best for this) to use as lunchmeat. I fried it up in thin strips with onions and red peppers, and rolled into a wrap, it was delicious! Does it taste like beef? No. But it is good in it's own right, full of flavor and you can fry it up and dip it in steak sauce, bbq sauce or whatever you like. I thought it was really tasty. The tomatoes give it a rich flavor I have not found in my other seitans.
If you prefer, you can also simmer this on the stovetop for one to one and one half hours instead of the crockpot. Either way it will be delicious. Put a couple bay leaves in the water to give it a nice flavor while simmering. Enjoy!
