This is an easy stew to make on any weeknight. It only has to simmer for about 30 min, and the prep time is very minimal.
Ingredients:
1/4 cup (dry) green or brown lentils
1/2 white onion diced
1/2 red pepper diced
2 ribs of celery diced
1 large carrot diced
1 tsp minced garlic
1 tsp minced ginger
2 T low sodium soy sauce
1 tsp Better Than Bouillon vegetable base
1 bay leaf
1 T of fresh parsley chopped
3 cups water
Combine all ingredients in a pan and bring to a boil. Turn down to low heat, cover, and simmer for 30 minutes stirring occasionally. Add more water as needed to get the thickness you like. Remove bay leaf before serving. Salt and pepper to taste. Absolutely delicious! This makes 2 good size servings, approx. 110 calories ea.
