Soup again! Man, I love a good soup. This one really gives you that warm cozy feeling, it is creamy, and full of flavor. For the most part, you just cut all your vegetables up into bite size pieces and simmer on the stovetop until nice and tender. Feel free to use your own favorites, but these made a nice combination.
Ingredients:
1 large Russet potato, raw, peeled and diced.
1 lb(s), Scallion
1/2 cup, Corn
1 cup, cooked, diced , Chicken breast, grilled, skinless
2 cup, Tomato diced
1/2 Onion chopped
1/2 Shallot chopped
2 cup, Carrots
1/2 cup Red Lentils
1/2 cup, Green peas
3 Tsp, Chicken Bouillon
3 cup (8 fl oz), Water
1 whole eggplant, Eggplant
S&P to taste
3 Tablespoons Heavy Cream stirred in last 10 minutes
I simmered this on the stovetop for approx one hour covered until everything was nice and tender. The red lentils are a nice touch, they pretty much disintegrate by the time the soup is done, but they do give a great creamy texture. I stirred the cream into it the last 10 minutes. Truly a delicious meal. If you are looking for something a bit more hearty, feel free to add additional potatoes or chicken. I tried to keep this one fairly low calorie without sacrificing flavor. I hope you enjoy it! It is great served with some crusty bread or crackers.
